What's Cooking Wednesday

Mushroom and Tortellini Soup
2 tsp olive oil
2 medium carrots diced
1 rib of celery diced
1 clove of garlic minced
2 tsp tomato paste
8 oz mixed wild mushrooms
4 cups beef broth
1/4 tsp thyme
3 cups tortellini
in pot combine oil carrots celery and garlic cook over medium heat till veggies are tender. Add tomato paste mushrooms broth thyme and 2 cups of water. bring to a boil. Add tortellini and cook till tender about 4 minutes.
Makes 8 cups 120 calories per cup
